Did you know Where’s Wally is called Where’s Waldo in the US!! How weird is that! Upon googling to find out why the difference, I also found out that Wally aka Waldo, is also Walter in Germany (“Wo ist Walter?”) and in Norway, he’s Willy (“Der hvor er Willy?”). But in France, he became Charlie (“Ou est Charlie?”), in Denmark, Holger and in Israel, Eff!!! Crazy crazy!!! Anyway I digress.

In my fridge I had a cauliflower that looked like he needed eating! As the weather has been so hot, I haven’t been making curries etc to go with cauliflower rice, or cauliflower mash…..

Then I realized, if I blended up my cauliflower with some magic ingredients, it would make a great, super healthy, 100% paleo, substitute for a creamy sauce.

Carbonara3My method of using cauliflower for a white, creamy sauce can be used for other pasta style dishes:-

  • Alfredo Sauce
  • Lasagna White Sauce
  • Mushroom Pasta Bake etc… The options frankly are endless.

Anyway in this recipe I have recreated a delicious, guilty free carbonara, which is gluten free and uses zero cream!


100% Paleo Carbonara

You will need:-

  • 1 cauliflower, diced.
  • 1 dessert spoon of clarified ghee.
  • 3 courgettes/ zucchini, mandolin/ use a julienne peeler.
  • 1 clove of garlic, minced.
  • 1/2 an onion finely sliced.
  • Pancetta, diced.
  • 300ml Organic chicken stock.
  • 4 eggs.


  1. In a pan, fry off the garlic and onion in the ghee. Add the diced cauliflower, and chicken stock and simmer for around 10 minutes until soft. Add salt and black pepper.
  2. Meanwhile make your courgette noodles, by julienning or using your mandolin.
  3. Now fry off the pancetta for around 10 minutes until crispy.
  4. Once the cauliflower is soft, remove from the heat take a hand blender and blitz, until the sauce is smooth. Staying off the heat, crack in the 4 eggs, and blitz through the blender. (The eggs give the sauce a silky texture.)
  5. In a separate pan, add the courgette, and top with the sauce.
  6. Return to the heat and stir for around 3-4 minutes.
  7. Add 2 thirds of the pancetta. Stir in.
  8. Serve up, and top with the remaining pancetta.
