Chinese inspired chicken with chilli greens

When I am trying to eat über healthy, and as clean as possible, lean chicken breasts and greens, full of antioxidants are always on my menu.
Chicken and veg, can sound like a foodies worst nightmare, bland, boring, torment to your taste buds….. However fear not….
If you’re going to be uber healthy, you need to make sure your food is tasty and bursting with flavour. It can’t be a chore to eat, in fact it MUST be a pleasure- full stop.
Begin your week eating healthily, it will become a habit; in most instances you habit will then continue through the week, and maybe even take you right through the weekend.
This is a really simple and quick recipe. And it actually tastes bloody fantastic! Result!
I also did Crossfit today! Boom; feeling strong and back on the proverbial wagon!

Ingredients

  • Free range chicken breasts
  • Broccoli (cut into small pieces.)
  • Spring onions
  • Spinach
  • Asparagus
  • Garlic
  • Ginger
  • Chilli flakes
  • Ground almonds
  • Black pepper
  • Raspberry vinegar
  • Honey
  • Egg
  • Lime

Method

  1. Take the chicken breasts and dice. Mix an egg white with a splash of lime and a pinch of chilli flakes. Add a spoon full pf ground almonds. Use the batter to finely coat the chicken breasts.
  2. Heat a pan with coconut oil.
  3. Add the chicken and fry until cooked and golden brown on the outside.
  4. Meanwhile rinse the broccoli and spring onions, spinach and asparagus, then add the broccoli to the pan, with raspberry vinegar and a tablespoon of water. Steam. Add chopped garlic and chilli flakes, plus the juice of a lime. Add a small touch of honey.
  5. Throw into the pan asparagus, for 1 minute, and the spinach and spring onions.
  6. Put in bowls and serve.
