My life at the moment is busy mental at the moment, leaving me with not much shopping time.

Even when I do go shopping in the US, it literally takes me a lifetime! All the products are vastly different to that in the UK, so I am stood there studying the back of cleaning products, deodorants, you name it!! It’s quite overwhelming actually; and I think store employees think I am sometimes a bit gormless! lol! “Are you ok Miss!” haha!

So this dish is great for when you have a busy schedule and very little shopping time, as guess what! It’s freezer and pantry food! :-)

As you know, I’ve been stock piling eggs, but I’ve been buying big batches of frozen cod from Wholefoods.

Such a versatile product, it’s great for creating quick but tasty paleo dishes:-

All you need is some almonds, garlic, and frozen fish and hey presto a delicious dinner in no time!

Recipe

  • Frozen Cod (skinned)
  • 1 handful of whole almonds
  • 2 cloves of garlic
  • Butter
  • Salt and Black Pepper

Method

  1. In a mini blender blitz the almonds and garlic together.
  2. Lay out the frozen fish in a baking dish.
  3. Top with butter, and the blitzed almond crunch.
  4. Season with salt and black pepper.
  5. Bake for around 20 minutes.

Done!! :-)

Serve with frozen peas if you literally have nothing in the fridge.

I was lucky enough to have some fresh green beans! I mixed them with lashings of my kick ass salsa  and lots of freshly squeezed lemon.

Delicious and incredibly easy!
