Leftover roast chicken. Perfect to wack between too slices of bread, smothered in butter…. Ahh!

What can you make that is equally delicious, when you’ve gone paleo!??

Chicken salads, as much as they are scrumptious; can become a little dull or repetitive.

So, how can you sex up leftover chicken, and turning it into a family favourite- which they will ask for over and over again.

You will need:-

  • 2 handfuls of free range roast chicken
  • 2 courgettes, grated
  • 4 spring onions, chopped
  • 2 cloves of garlic, minced
  • 1 red chilli, chopped
  • Handful of coriander
  • Knob of butter
  • 3/ 4 eggs

Method

  1. Take a large mixing bowl. Then throw in the chicken, and the grated courgette.
  2. Now add the onions, coriander and chilli.
  3. Season with salt and black pepper.
  4. Add the 2 eggs and a knob of butter. The consistency should be that the mixture retains form and isn’t too runny.
  5. If required add additional eggs Thoroughly mix together.
  6. Now, either pan fry – in olive oil, if you are in a rush. Takes around 3 mins each side, or,
  7. Put in a muffin tray and bake for around 40 minutes until crispy.
  8. Baking is my favourite method!
