Happy weekend folks, here’s a foolproof, crowd pleasing chicken recipe!

Juicy chicken

This is a super easy recipe (anyone can manage this) & it tastes delicious! It can be made in batches and is great to take along to work for lunch. The flavoursome tomatoey aromas are certain to make your co-workers jealous!

Serves 2 people

  • 2 Chicken breasts– premium quality and free range/ organic where possible.
  • 2 Cloves of garlic.
  • Handful of fresh herbs, I used thyme & basil.
  • 6 slices of good quality streaky bacon.

For the ratatouille

  • 1 Onion diced.
  • 2 Cloves of garlic.
  • 2 Peppers.
  • Handful of cherry tomatoes.
  • 1/2 tinned tomatoes.
  • Handful of chopped fresh herbs.
  • 1 Courgette diced.
  • Handful of spinach (optional)

Method

  1. Start by making the ratatouille. This is dead simple, simply chop the veg, it doesn’t matter if you don’t do this neatly. It adds to the texture of the dish.
  2. In a pan, fry the onions off with the garlic and butter on a medium heat for around 5-10 minutes until caramelised.
  3. Now add the courgettes and mix together. Leave on the heat for a further 5 minutes. Now add the remaining veg (excluding spinach) and herbs and the tinned tomatoes.
  4. Season with salt and black pepper.
  5. Leave to simmer in the pan on a low heat for around 30 minutes.
  6. Whilst the ratatouille is simmering, butterfly the chicken breast. Chop the garlic and herbs and place in the middle of the breast. Add a couple of slices of butter; this will keep the moisture in the chicken making it juicy and succulent.
  7. Wrap each breast neatly with streaky bacon.
  8. Add to a roasting tin and cook for 25 minutes at 200 degrees.
  9. When ready to serve, add the spinach to the ratatouille and stir.
  10. Leave the chicken to rest for 5 minutes and slice.
  11. Serve
