Hello folks! I am now up in Lake Tahoe, luckily for me in in the most gorgeous hotel.

As I am not cooking at the moment, I wanted to share with you an old but trusty favourite recipe. One that is delicious, and will be coming back into season very soon!

Lamb with peppers, olives, capers.

Serves 2

You will need:-

  • 4 x Spring lamb steaks
  • Handful of olives
  • Handful of chopped parsley
  • 3 shallots
  • 2 red peppers
  • 1 dessert spoon of capers
  • Olive Oil
  • Balsamic Vinegar
  • 2 cloves of garlic, minced

Method

  1. Take the olives and chop, de-seed and slice the red pepper, season the steaks with salt and black pepper.
  2. In a roasting tin, fry off the shallots with olive oil and the garlic.
  3. Add the steaks, red peppers and olives and a good glut of balsamic vinegar.
  4. Roast on a high heat for 5 minutes each side.
  5. Garnish with fresh parsley and serve.
