Just arrived back from my house hunting trip…. so pleased to be back on the Crossfit and healthy eating wagon! California, I loved you very much but the naughty food so readily available has left me dreaming of leaf upon leaf of fresh spinach! :-)


On my way home from the airport at 5.30pm Sunday night I managed to call in at my local shop and pick up some salmon, cucumber, a handful of herbs, a pomegranate and some avocado.

Anyway, upon opening my door I discovered a perfectly ripe mango (all sad and neglected) laying in my fruit bowl.

Not wanting to waste my delicious mango, I googled paleo mango recipes! This is what came up, this lush recipe from Michelle Tam of Nom Nom Paleo.


I have played around with this recipe a bit, and I must say, the pomegranate makes a welcomed addition providing bursts of flavour.

Serves 2-4 people

Paleo Mango, Pomegranate, Mint and Avocado Salsa

You will need:-

  • 1 Mango
  • 1/3 Cucumber
  • 1 handful of Mint
  • 1/2 Pomegranate (seeds)
  • 1 Avocado
  • 1 Lime (juice)
  • Olive oil


  1. Dice the mango, now the cucumber and avocado. Add to a mixing bowl.
  2. Throw in the pomegranate seeds and the chopped mint.
  3. Now add a small drizzle of olive oil and the lime juice.
  4. Stir and mix together.
  5. Now your salsa is ready to serve.


I enjoyed my salsa with salmon, and had the leftover with chicken for my lunch. Perfect as a fruity starter, or a quick to eat main meal!
