This weekend we were lucky enough to head out on a road trip, down highway 1 to take a look at the beautiful unspoiled beaches of Big Sur. Just under a 2 mile drive from our pad, we drive down past Monterey, then along highway 1.

The weather is pretty changeable this time of year at Big Sur. The wind and fog, can make for pretty chilly weather, however find the right cove in the sunshine and the place is utter bliss.

Anyway, so heading back home, we called off in Monterey, at a fish market and picked up some “red rock cod.”

When we got home we were totally starving so what could be more simple, than dusting fish in coconut flour for a crispy texture, then serving up with lots of fresh lime salsa and guacamole!

Paleo Rock Cod, Salsa and Guacamole

You will need:-

  • Fish (try cod or sea bass.)
  • Coconut flour, to dust
  • Coconut oil, to pan fry
  • Fresh salad leaves, chopped
  • Cherry Tomatoes, 2 handfuls, chopped
  • Spring Onion, 4 chopped
  • Avocado, 1 mashed
  • Chili, 1 diced
  • Fresh Mint, 1 handful, chopped
  • Green Pepper, 1 diced
  • Lime, 2 x juiced

Method

  1. Make your salsa, by chopping the tomatoes, pepper, and half the chili, and the chopped mint. Add 1 lime juice and mix.
  2. Make your guacamole, I made a basic one, by adding avocado, half the chili, and spring onions and juice gf one lime then mixing.
  3. On a plate, lay out your salad.
  4. Now take some coconut oil. Heat up a pan. Once warm, dust the fish in coconut oil and fry on each side for 5 minutes each.
  5. Now assemble and serve.
