Raw Paleo Pad Thai
Ingredients
- 4 courgettes- 2 yellow, 2 green, julienned.
- 4 salad onions, finely sliced.
- 4 carrots, julienned.
- 1/2 white cabbage, finely sliced.
- 10 brussel sprouts, grated.
- 10 radishes, grated.
For the Mango Sauce
- 1 mango, diced
- 1 /2 white onion, sliced
- 1/2, chili
- 1 lime, juiced.
Method
- For the Pad Thai, simply add the raw ingredients to a bowl, and dress with plenty of lime juice and a splash of olive oil.
- For a richer dressing, add coconut milk and a spoonful of almond butter mixed together.
- For the Mango Sauce, simply add all ingredients to a blender, and puree! Easy.
