Raw Paleo Pad Thai

Ingredients

  • 4¬†courgettes- 2 yellow, 2 green, julienned.
  • 4 salad onions, finely sliced.
  • 4 carrots, julienned.
  • 1/2 white cabbage, finely sliced.
  • 10 brussel sprouts, grated.
  • 10 radishes, grated.

For the Mango Sauce

  • 1 mango, diced
  • 1 /2 white onion, sliced
  • 1/2, chili
  • 1 lime, juiced.

Method

  1. For the Pad Thai, simply add the raw ingredients to a bowl, and dress with plenty of lime juice and a splash of olive oil.
  2. For a richer dressing, add coconut milk and a spoonful of almond butter mixed together.
  3. For the Mango Sauce, simply add all ingredients to a blender, and puree! Easy.
